Vegetable Fritters with Turmeric Dipping Sauce & Fried Egg

Vegetable Turmeric Morning Fritters with Mustard Yoghurt Mayo

Vegetables for breakfast ? Not something I would have considered even a year ago. But it seriously changes how good I feel for the rest of the day.

How to make these for two (6 fritters):

Shred whatever vegetables you have to hand but I used a courgette, a carrot and a cup of red cabbage.

Take a couple of medium eggs, 40g of flour, a teaspoon of turmeric and whisk to a thick batter.

Combine with the vegetables and cook on the hob as you would pancakes,

For the mustard yoghurt sauce:

I took a tablespoon of strained yoghurt with a tablespoon of mayonnaise (@stokes_sauces is gluten free), a teaspoon of mustard, a tablespoon of apple cider vinegar and water to thin.

This sauce keeps well in the fridge and is a good sauce for lots of savoury dishes.
