Eggs with Chives, Shoestring Chips, Beetroot & Apple Slaw & Mustard Mayo

Keep it simple - Egg & Chips for lunch!

Someone reminded me this week that sometimes just keeping things simple is more than enough. Who doesn’t like egg & chips?

Here’s my healthy version , I love to make my eggs on my pancake pan in these little silicon rings and serve with some fresh chopped chives. I air fried my chips without oil.

A beetroot and apple salad, made with garlic, olive oil and apple cider vinegar is a perfect in season side.

Obviously there has to be a dollop of mustard sauce somewhere, I made mine with Dijon mustard, @stokes_sauces mayo and @iseyskyruk strained yoghurt.
