Insanely good Faux Snickers bar!

Good things to know about peanuts:

Peanuts help prevent heart disease by lowering cholesterol levels. They are also rich in protein.

Peanuts and peanut butter are rich in soluble and insoluble dietary fibre, both of which help support regular bowel movements and improve constipation.

Peanuts and peanut butter have a low glycemic index, which means they don't cause blood sugar to rise sharply.

How to make these:

1: Melt the coconut oil
2. Stir in the maple syrup and mix in ground almonds and rice flour
3. Press this mixture into a baking dish lined with parchment and bake for 10 minutes at 180c
4. In a blender process the medjool dates , smooth peanut butter, almond milk and vanilla extract
5. Spread this into the cooled base and scatter over the peanuts , press them in gently and chill in the fridge for a couple of hours at least
6. Melt the dark/milk chocolate and spread all over the traybake, chill in the fridge before cutting

What you will need:

30g coconut oil

5 tablespoons of maple syrup

75g of ground almonds

75g of rice flour

130g medjool dates

85g smooth peanut butter

2-3 tablespoons of almond milk

1 teaspoon of vanilla extract

120g peanuts

Keeps in the fridge for a week or in the freezer for a month
