Simple Almond Cookies

I love these simple little cookies for many reasons: they’re high in protein and filling; easy to make; dairy free, gluten free and free of refined sugar; no eggs.

Almond flour is rich in vitamin E, high in magnesium and higher in fibre and protein than regular flour.

These cookies are soft with a chewy texture and make a good option for on the go.

What you will need:

  • 2 cups of almond flour

  • 1/2 teaspoon of baking powder

  • 3 tablespoons of maple syrup

  • 3/4 of a cup of peanut butter (I used @pip and nut)

  • 1 teaspoon of almond essence

How to make them:

  1. Mix the almond flour, peanut butter and maple syrup. It will be quite a dry consistency so mix well to remove any lumps of flour.

  2. Roll a small amount in between your hands to a smooth golf ball size. Transfer on a parchment paper covered baking sheet until you have you about 12. Then, using a fork, gently press on the balls to flatten and mark. Keep the cookies about 1 inch thick.

  3. Bake in the oven for 10 minutes, until slightly golden brown on the edges. They will quickly firm up as they cool down, but allow half an hour before sampling!
